Our Chinese chicken is ideal for making chicken fried rice.
To make chicken fried rice heat 2 teaspoons of oil in a non-stick pan on a medium heat, add the chicken & cook for 4-5 minutes until chicken has browned & cooked through, remove the chicken & cover with aluminum foil to keep warm, add 1 teaspoon of oil to the pan, then add 1 finely chopped onion,1 carrot sliced & cook for 4-5 minutes until the vegetables are soft, add 2 teaspoons of minced garlic cook for 30 seconds, remove vegetables from pan & plan in aluminum foil to keep warm, add 1 teaspoon of oil to pan & add 2 lightly beaten eggs to pan, stirring occasional with a spatula until the eggs are scrambled, season with salt & pepper, add 3 cups of cooked white long grain rice to the pan, chicken & vegetables & 1/2 cup of thawed frozen peas, stir in 3 tablespoons of soy sauce & 1 tablespoon of toasted sesame oil, stir gentle until everything is thoroughly combined & warmed through, 4-5 minutes, sprinkle spring onions over the rice mixture, then serve.
